      Foil-wrapped baked potatoes


      Serves 4
      • 4 medium potatoes
      • salt
      • aluminium foil
      • Villa Magra EVOO


      Clean the potatoes under fresh running water, scrubbing and rinsing them well. Remove the excess of moisture by drying the potatoes with a towel. Pierce the potatoes with a fork and wrap them individually with the aluminium foil. Pre-heat the oven at the maximum temperature and place the potatoes on the rack, baking them for around 60 minutes or until they can be easily pierced with a fork.
      Serve the potatoes immediately, opening the wrap and cutting them in half lenghtwise. Season with fresh Villa Magra and salto to taste.
