Harvest system: hand-picked. Harvest time: from 15th to 31st October. Extraction system: Frantoio Franci, modern continuous system. Appearance: clear and filtered. |
Density: medium fluidity. Colour: green with hints of gold Fragrance: intense fruity aroma, opening to the nose with elegant and strong aroma of green olive, fresh and pungent grassy scent with hints of artichoke and cardoon , predominance of elegant notes of roasted coffee. Taste: intensely fruity, fresh, grassy, pungent, complex. Decisively bitter and peppery, harmonious, elegant and well structured, with a fresh rich finish of spicy grass. Use: fresh in soups, on boiled or raw vegetables, bruschetta, pinzimonio, red meats, tomato salads, boiled potatoes or onions, with plain rice or pasta and well-matured cheeses.
