40%, Olivastra 10%.
Harvest system: hand-picked
Harvest time: from 1st to 20th November.
Extraction system: Frantoio Franci, modern continuous system.
Appearance: clear and filtered.
Density: medium fluidity.
Colour: green, with hints of gold.
Fragrance: fresh and clean fruity aroma, rich in grassy scents with predominance of artichoke, elegant notes of fruit and spices.
Taste: ample and harmonious, with herbaceous hints of artichoke, blossoms and fruit, extremely complex. Medium intensity of harmonious bitter and peppery features, a rich finish with a long spicy persistence.
Use: fresh in soups, on vegetables, legumes, bruschetta, pinzimonio, green salads, medium-flavoured fish, roast meats, etc.
