Appearance: clear and filtered. Density: medium fluidity. Colour: green with hints of gold. Fragrance: medium fruit, clear scent of olives, herbaceous notes of artichoke and ripe fruit, reminiscent of tomato, to a lesser degree. Taste: fresh and clean, initially with slightly sweet flavour, followed by a palatable and harmonious bitter and spicy taste of medium intensity, rich persistence of vegetable flavour with predominant herbaceous hints of artichoke. Use: fresh in soups, on vegetables, legumes, meats, bruschetta, pinzimonio, salads, medium-flavoured fish. |
