Fragrance: fresh, intensely grassy with predominant aroma of artichoke, cardoon and green almond, enhanced by floral and cherry hints which create an extremely complex bouquet.
Taste: sample, with strong and decisive spice and bitterness, overlaid with excellent harmony, great complexity of herbaceous hints and long persistence of smooth aromatic notes.
Use: strictly fresh to contrast the the sweet flavour of potatoes, beans, chickpeas and vegetables in general; on red meat or strong-flavoured fish; with fresh cheese, such as ravaggiolo and mozzarella, which enhance the fresh-green features of the oil, excellent on spinach and ricotta tortelli, or with plain rice and pasta with thin slivers of parmesan.
Awards:

1st Prize, blind oil-tasting panel reserved for the world’s best oils, organized by the Grand
  Jury Européen, in June 2003 at Chateau Branire. In October of the same year, at the annual
  great Bordeaux wine tasting venue, the president of the Grand Jury Européen , Mr. François
  Mauss, proposed and organized an exchange: 100 bottles of “Villa Magra Gran Cru” for 100
  bottles of great French Bordeaux, such as Chateau Latour, Chateau Lafite, Cheval Blanc, Petrus.
