Fragrance: Medium fruit flavour, initially opening out to the nose with a rich and elegant aroma. Fresh and herbaceous, delicate, very complex and clear scent of olives. Evident notes of artichoke and tomato along with floral and fruity scents. To the nose it offers two distinctive features: one pungent and penetrating, rich in green and unripe scents; the other softer, enfolding, particularly rich with added riper and more complex hints.
Taste: The taste has a rich vegetable potency, where artichoke and tomato are dominant. A slightly sweet sensation opens out onto a well- balanced bitter and spicy vein, rich in persistent aromatic notes, soft and very pleasant. Almost imperceptible hints of "zagara" - the orange flower - embellish the flavour. Its complexity is the element which best characterises this product.

the Az. Agr. Fontanasalsa , Trapani, Sicily, and the best extra virgin olive oil
produced by Frantoio Franci , Montenero d’Orcia, Tuscany.
