Appearence: clear and filtered. Density: medium fluidity. Colour: green with hints of gold. Fragrance: medium fruit , clear scent of olives, smell of fresh hay and artichoke and ripe fruit, reminiscent, to a lesser degree, of tomato. Taste: fresh and clean, initially with a slight sweet flavour, followed by a palatable and harmonious bitter and spicy taste of medium intensity, persistence rich in vegetable notes with predominance of artichoke. Use: fresh in soups, on vegetables, legumes, bruschetta, pinzimonio, salads, medium-flavoured fish, meats. |
