      • Variety of olives: Frantoio, Moraiolo, Leccino, Nocellara and others in lesser quantities.

      • Extraction system: Franci Oil-mill, modern continuous system
      • Appearance: clear and filtered
      • Density: medium fluidity
      • Colour: green, with hints of gold
      • Fragrance: medium fruity, clear scent of olives, smell of fresh hay, artichoke and banana, reminiscent, to a lesser degree, of tomato.
      • Taste: fresh and clean, initially with a slight sweet flavour, followed by a palatable and harmonious bitter and spicy taste of medium intensity, persistence rich in vegetable notes with predominance of artichoke.
      • Use: fresh in soups, on vegetables, legumes, bruschetta, pinzimonio, salads, medium-flavoured fish, desserts.
