Production zone: the hills of Val d’Orcia and Tuscan Maremma.
Above sea level: 380-700m.
Variety of olives: mostly Olivastra Seggianese; Leccino, Frantoio and Moraiolo in lesser quantities.
Harvest system: hand-picked.
Harvest time: from 1st November to 20th December.
Extraction system: modern continuous system.
Appearance: clear and filtered.
Density: medium fluidity.
Colour: yellow, with hints of green.
Fragrance: medium fruit, clear scent of olives. Soft notes of ripe fruit with banana predominant; slight herbaceous scent of artichoke.
Taste: clean, initially with a slightly sweet flavour, followed by a palatable and harmonious slightly bitter and spicy taste. Soft persistence of herbaceous scent of artichoke.
Use: fresh on salads, bruschetta, pinzimonio, fish; to prepare mayonnaise and other dressings.
